The ChefBran Muffins
For the health conscious, these Bran Muffins will delight you!
 
4 cups wheat bran flakes cereal with raisins 1 teaspoon salt
2½ cups all-purpose flour 2 eggs, beaten
1½ cups sugar 2 cups buttermilk
2½ teaspoons baking soda ½ cup vegetable oil
 
1 Set oven to 400º.
2 Combine bran flakes, flour, sugar, baking soda, and salt in large bowl.
3 Make a well in the center of the mixture and add eggs, buttermilk, and vegetable oil.
4 Stir until mixture is just moistened.
5 Grease a miniature (or regular) muffin pan. You can also use muffin paper cups.
6 Spoon the batter into the muffin pan or cups.
7 Bake muffins for 12 minutes. The larger muffins will take about 20 to 25 minutes to bake.

Coffee. . .á la Heaven!

1 Combine a half cup of whole coffee beans, tablespoon of cocoa, quarter teaspoon nutmeg; grind to a medium blend.
2 Layer a quarter cup shopped and toasted almonds in coffee filter. Top with ground mixture. Pour ¼ teaspoon almond extract over coffee mixture and brew.
