Bran Muffins | |
| For the health conscious, these Bran Muffins will delight you! | |
| 4 cups wheat bran flakes cereal with raisins | 1 teaspoon salt |
| 2½ cups all-purpose flour | 2 eggs, beaten |
| 1½ cups sugar | 2 cups buttermilk |
| 2½ teaspoons baking soda | ½ cup vegetable oil |
| 1 Set oven to 400º. 2 Combine bran flakes, flour, sugar, baking soda, and salt in large bowl. 3 Make a well in the center of the mixture and add eggs, buttermilk, and vegetable oil. 4 Stir until mixture is just moistened. 5 Grease a miniature (or regular) muffin pan. You can also use muffin paper cups. 6 Spoon the batter into the muffin pan or cups. 7 Bake muffins for 12 minutes. The larger muffins will take about 20 to 25 minutes to bake.
1 Combine a half cup of whole coffee beans, tablespoon of cocoa, quarter teaspoon nutmeg; grind to a medium blend.
