Breakfast Burritos | |
| For those you who like something a little different, try this south of the border breakfast which will put some zip into your life! | |
| ½ lb bulk pork sausage | 2 large potatoes, peeled and grated |
| 1 medium-size green pepper, chopped | ½ cup chopped onion |
| 8 eggs | 8 (eight-inch) flour tortillas |
| ¼ cup butter or margerine, melted | 2½ cups shredded cheese |
| Taco sauce, optional | Salsa, optional |
| 1 Cook sausage until browned; drain. Reserve drippings in the skillet. Set sausage aside. 2 Add potatoes, green pepper, and onions to skillet. Cook until potatoes are browned. 3 Add eggs and cook; stirring occasionally, until eggs are firm but still moist. 4 Stir in the cooked sausage. 5 Wrap tortillas tightly in foil and bake at 350º for 15 minutes. 6 Spoon an equal amount of egg mixture in the center of each tortilla and roll up. 7 Place filled tortillas in a lightly greased 13x9x2-inch baking dish and brush with melted butter. Cover dish with foil. 8 Bake at 375º for about 10 minutes. 9 Sprinkle the tortillas with cheese, recover with foil and bake 5 minutes longer or until the cheese melts. 10 Serve with Taco sauce, sour cream, and/or salsa.
